German Mountain Cheese

The friars made mozzarella and old cheddar, (white) staying clear of complex cheeses and curds. Anyhow, the oxcart could only accommodate light cheeses and whey’s, anything heavier or more complex would have busted the axel, caroming the oxcart into a frenzied cartwheel.
